The region boasts a wealth of culinary, including an abundance of great seafood, taking full use of its seaside setting, and locals insist on utilising local, fresh, and honest ingredients. Cockles, clams, oysters, squid, sea bass, sea bream, mackerel, and sardines are frequently among the daily fresh catches. The daily catch is sold by weight in a large number of fish restaurants in the Algarve. Visitors can sample the well known "cataplana," a dish made popular by the locals and consisting of mussels, clams, chorizo, bacon, garlic, onions, and olive oil, as well as the renowned fish stew "Caldeirada" from the area. Inland, poultry and pork, fresh vegetables and dried pulses are the primary ingredients in the majority of local dishes. Traditional dishes are delicious slow cooked meat stews, served with pulses and fresh vegetables, smoked and cured meats and traditional Algarvian bread which is often used as a main ingredient in the preparation of certain dishes. Bread baking in the region is just as important a part of the culture as wine, cheese and pastries. One of the many advantages of the Algarve’s mild climate is the ability to produce the most important ingredients of Mediterranean cuisine, including olive oil, figs, almonds, oranges and honey. They are combined according to old recipes, some of them tested and put together behind the walls of monasteries and convents, and the result is magical. The most famous dessert is the Dom Rodrigo, one of Portugal’s culinary wonders, made from egg yolks, sugar and the very typical almonds.
